Rachel Brathen is a Swedish native, New York Times best-selling author, serial entrepreneur, and international yoga teacher living in Aruba with her husband Dennis and their baby girl Lea Luna.
Rachel is the founder of one of the first online yoga platforms, the now-retired oneOeight.com, which was the most successful crowd-funded yoga project of all time. That platform has since grown and transformed into the Yoga Girl site and is now made up of a vast community of dedicated practitioners from all over the world looking to cultivate balance, create space for inner healing, and to deepen their yoga practice.
Rachel is also the owner of Island Yoga - the largest yoga studio in the Caribbean, where she hosts yoga teacher trainings, retreats, workshops, and classes year-round.
Giving back to the community has always been at the center of all of Rachel’s initiatives. She runs two non-profit organizations: Sgt. Pepper’s Friends; an animal rescue foundation based in Aruba, and Yoga Girl® Foundation, an organization benefitting women and children in need.

Combine 1/3 cup pancake mix with 1/3 cup water and mix until batter is smooth. Let the batter rest for a moment to thicken. Heat pan and add a dash of oil (we like coconut!). Scoop the batter in and lower the heat slightly. When the first bubbles start to pop and the pancake becomes golden brown, flip! Cook until second side is golden (15-20 seconds). Serve with fruit or maple syrup in the morning, enjoy them plain as an afternoon snack, or prepare with veggies as a savory dinner!
