Rachel Brathen is a Swedish native, New York Times best-selling author, serial entrepreneur, and international yoga teacher living in Aruba with her husband Dennis and their baby girl Lea Luna.
Rachel is the founder of one of the first online yoga platforms, the now-retired oneOeight.com, which was the most successful crowd-funded yoga project of all time. That platform has since grown and transformed into the Yoga Girl site and is now made up of a vast community of dedicated practitioners from all over the world looking to cultivate balance, create space for inner healing, and to deepen their yoga practice.
Rachel is also the owner of Island Yoga - the largest yoga studio in the Caribbean, where she hosts yoga teacher trainings, retreats, workshops, and classes year-round.
Giving back to the community has always been at the center of all of Rachel’s initiatives. She runs two non-profit organizations: Sgt. Pepper’s Friends; an animal rescue foundation based in Aruba, and Yoga Girl® Foundation, an organization benefitting women and children in need.

Combine 1/3 cup pancake mix with 1/3 cup water and mix until batter is smooth. Let the batter rest for a moment to thicken. Heat pan and add a dash of oil (we like coconut!). Scoop the batter in and lower the heat slightly. When the first bubbles start to pop and the pancake becomes golden brown, flip! Cook until second side is golden (15-20 seconds). Serve with fruit or maple syrup in the morning, enjoy them plain as an afternoon snack, or prepare with veggies as a savory dinner!

I literally crave these pancakes every morning! I love that you can make them thicker or thin based on preference. I love how if you almost deep fry them they taste like funnel cake! AND since you just add water makes an easy to bring travel breakfast for the whole family!
This mix is a stable in our house now!! We really love it in the waffle maker!! We use 25% less water and leave it on the counter to thicken for about 25 mins, and viola the most perfect crunchy on the outside moist on the inside waffles out of the maker! Did you just wake up, would you like a waffle, or is it late afternoon and you'd like a waffle, or is it dinner time and you really don't feel like making anything other than waffles!

This mix is delicious for pancakes or banana bread. It’s taste so good, you forget it’s so good for you. I’m Celiac, so I really welcome a healthier way to bake and this mix does it!!
